1 egg
40g grated Gruyère
15g butter
15g wholewheat flour
100ml high protein milk
Spices: nutmeg at will
Preheat your oven to 180°.
Heat the butter in a saucepan over low heat and add the flour. Stir your mixture quickly for 1 minute.
Add the milk (warm!) and whisk your preparation for a few minutes, then remove the pot from the heat.
Separate the white from your egg yolk and whisk it until stiff (with a pinch of salt).
In the cooled pot, add the egg yolk and grated cheese, along with the nutmeg; mix well.
Incorporate snowy white and mix gently.
Pour your preparation into a silicone mold and bake for about thirty minutes.
